We had an absolutely perfect day with our tour guide - Rogin Luo - who took us for a hike along The Great Wall! Didn't know what to expect and were thrilled to have him as our guide. Very imformative, knowledgable and fun! We go to experience a part of The Great Wall that was unrestored and see all its natural beauty. Got a long history lesson along the way!

After the hike, we all went to lunch at a small place at the bottom of the hill. Located in a house, we ate lunch in the proprietors bedroom! What a hoot! Rogin is the Best of the Best! This tour company delivered for us and we are extremely grateful.

“北京小吃”申报市级非遗
 
在取得西城非物质文化遗产身份之后,“北京小吃食俗”有望进一步申请成为市级非物质文化遗产。记者昨日从北京老字号协会获悉,“北京小吃食俗”已正式启动市级非遗申报,按照申遗需逐级提出的原则,最快年内,北京小吃食俗就将进入市级非物质文化遗产名录。据了解,最终取得市级非遗身份的北京小吃,将从艾窝窝、豆馅烧饼、爆肚、茶汤等30种“群众最喜爱的北京名小吃”中遴选而出。

北京老字号协会相关负责人介绍,“北京小吃食俗”启动申遗始于3年前。2010年11月本报刊发了《北京市文史馆员呼吁“北京小吃”申非遗》一文,反映了社会对于北京小吃申遗的希望,随后北京老字号协会便启动了申遗计划。按照申遗需逐级提出的原则,其首先向西城区提起了非遗申请,并于去年正式通过。目前,“北京小吃食俗”正在市级申遗阶段,成功之后,还将继续申请成为国家级非物质文化遗产。

北京老字号协会会长姜俊贤表示,“北京小吃食俗”既不同于物质遗产,也不同于纯正的文化遗产,而是介于两者之间,因而此次进行申遗的“北京小吃食俗”是一种打包申请形式,包括小吃的制作技艺和民俗传统两类内容,民俗、制作技艺、品种口味等都囊括其中。

经过问卷调查、综合分析,并依据有历史传统、有故事典故、制作技艺含量高、代表年节习俗、具有北京特色等多项标准,北京老字号协会从现存的205种北京小吃中,选出了首批30种“群众最喜爱的北京名小吃”,而最终进入市级非遗申报的小吃品种就将从这30种小吃中遴选。

“北京小吃虽然历史悠久、技艺精湛、种类繁多,但其传承与保护一直非常困难。”北京老字号协会副会长张健表示,北京小吃较为分散,除了护国寺、锦芳等老字号外,多数经营企业都规模较小且为单一品种经营的形式。这种分散经营的形式,很难形成规模效益和品牌影响力。“此次采用‘打包申遗’的形式,不仅可以将各种北京小吃聚集在一起,形成规模效应,也能在北京小吃的经营者之间搭建起交流的平台,并最终通过申遗的形式共同打造一个‘北京小吃’的品牌。”

对于老字号“打包申遗”,老字号专家刘满来认为这将给北京小吃发展带来新的契机,“老字号小吃企业应在经营方式、产品品类上进行更多的创新,更重视老字号背后蕴含的文化财富,在申遗的过程中让吃‘小吃’变成吃‘文化’。”

30种北京小吃

  艾窝窝、白水羊头、爆肚、茶汤、炒肝、炒麻豆腐、褡裢火烧、豆腐脑、豆面糕(驴打滚)、豆馅烧饼(蛤蟆吐蜜)、豆汁、咯馇盒、焦圈、煎灌肠、姜汁排叉、卤煮火烧、蜜麻花、面茶、奶酪、麒麟酥、馓子麻花、烧饼、烧麦、糖火烧、糖卷果、豌豆黄、杏仁豆腐、元宵、芸豆卷、炸三角。
